Fedtfattig æblekage
Det er lige nu at æbletræerne rundt om i de små og store haver bugner med æbler. I hvert fald her på matriklen er vi ret velsignede med æbler.
Og vi laver både æblechutney, æblejuice, bruger æbler i salaten, til morgenmaden og i kager.
Og findes der virkelig en bradepandekage med æbler, der smager fantastisk og ikke giver dårlig samvittighed fordi man har fyldt sig med sukker og deslige ?.

Jeg elsker at bage, men efter jeg har ramt en vis alder sidder fedtet både hurtigere fast og er mere genstridigt at komme af med. Suk.
Det gider jeg simpelthen ikke være med til. Jeg gider heller ikke kun leve af “salat og vand”. Faktisk spiser jeg generetl ret sundt, men engang imellem vil jeg sgu have kage !
Jeg søger derfor konstant efter kager på nettet, der er både sukker- og fedtfattige. Kan det kombineres med en glutenfri også, gør det ikke noget !
Og jeg er SÅ meget på denne æble bradepandekage, som jeg fandt på nettet og så selv har justeret (og håbede på det bedste).
Fedtfattig æblekage
Opskrift:
Dejen:
75 g. kokosolie (jeg varmede det for svag varme i en gryde, så det blev helt flydende – kølede det derefter af)
2 store spsk. græsk yoghurt (2%)
50 g. sukker
150 g. Perfect fit
1 tsk. vaniliesukker (eller vaniliepulver)
3 æg
1 tsk. bagepulver
150 g. hvedemel (kan sagtens erstattes med glutenfri – det gjorde jeg)
Toppen:
2-3 æbler skåret i tynde skiver/både
1 spsk. sukker (kan helt udelades, men giver en let karamel overflade)
1 spsk. kanel
10-12 hakkede mandler
Sådan kommer du i mål:
Pisk æg og sukker hvidt og skummende. Tilsæt den flydende kokosolie og græske yoghurt og rør godt. Bland mel, Perfectfit, vanille, bagepulver og vend det i dejen.
Bred dejen ud i en smurt bradepande på ca. 25 x 35 cm.
Læg æblestykkerne på dejen i et pænt mønster og tryk dem lidt ned i dejen.
Strø mandler, sukker og kanel over æblerne.
Bag kagen midt i ovnen ved 175 grader (160 i varmluftsovn) i ca. 30 minutter.
De små mængder sukker i kagen ligger faktisk indenfor rammerne af, hvad en diabetiker med type 2 må spise (oplysningen stammer fra den oprindelig opskrift).
Da jeg var yngre – ja faktisk indtil for nyligt kunne jeg ikke fordrage bagte frugter. Jeg er stadig ikke den allerstørste fan, men i denne kage gik den an. Det vil sige egentlig tager jeg æbleskiverne af jeg nupper et stykke. Selvom jeg ikke spiser æbleskiverne, så giver æblere en super lækker fugt og smag til kagen, så de kan ikke undværes.
Den smager iøvrigt både fantastisk lun og kold (stuetemperatur).
Jeg serverede skyr blandet med græsk yoghurt (lige dele) blandet med vaniliepulver.

Spændende kage, der måske kan bruges af en gammel kolesterolramt kvinde, for som du skriver, så kan det blive for kedeligt at leve af salat og vand. Når du ikke bruger hvedemel, hvilken slags mel bruger du så?

Ja det bliver virkelig dødsygt hvis man ikke bare engang imellem skulle kunne nyde et lækkert stykke kage (eller lign.). Jeg har bagt den 2 gange nu og det er virkelig en opskrift der kan anbefales. Jeg nyder den med god samvittighed 🙂

Hej Bettina – bliver lige nød til at skrive, at en person m diabetes type 1 hvor det er insulin krævende, kan spise nøjagtig hvad alle andre må, blot du tager insulin til det. Man skal tælle kulhydrater og der er mel en lige så stor årsag som sukke til, hvor stor mængde insulin der skal indtages. Er man type 2 er det korrekt det du skriver…. Blot en opfordring til at skrive type 1 eller 2 når du skriver diabetes.
