Banan is med hvid chokolade – opskrift.
Jeg er blevet bidt af at lave hjemmelavet ispinde. Altså egentlig har jeg lavet is lige siden jeg flyttede hjemmefra som 19-årige.
Det er så et par år siden.
For at det ikke skal være løgn, så har jeg brugt den samme opskrift altid.
Det er så et par år det er blevet til nu.
Det er en grundopskrift, der kan varieres i det uendelige. For et par uger siden prøvede jeg at lave en ny variant; banan flødeis med hvid chokolade.
Ahmen altså….. den var jo (også) god. Gennem tiden har jeg med samme grundopskrift lavet is med f.eks. chokolade skildpadder, After Eight, marcipan/nougat, hakket chokolade, knuste rutebiler, jordbær, hindbær, appelsin og en masse andre varianter. Det er kun fantasien der sætter sin begrænsning.
Denne gang var det så bananen der stod for tur. Og for første gang lavede jeg pind is med opskriften med min nye form fra Nicholas Vahé.
GRUNDOPSKRIFT PÅ IS:
- 6 pasteuriserede æggeblommer
- 1/2 liter piskefløde
- 1 dl vand
- 90 g sukker
- 1/2 stang vanilie eller vaniliesukker
Sådan gør du:
Vand og sukker koges til sukkeret er opløst. Pisk æggeblommerne og hæld den varme sukkerlage i, mens der piskes kraftigt. Tilsæt vanilie og pisk til massen er let og luftig. Pisk fløden stiv og vend den i æggemassen med f.eks. en dejskraber.
Du har nu lavet grundopskriften og kan putte det i du lyster.
Vil du lave banan is som jeg gjorde, så moser du 1 banan og hakker ca. 150 g hvid chokolade og vender det i. Hæld isen i formen og stik pindene i. Hvis du ikke vil lave ispinde, hælder du istedet massen i en form/skål eller lign., som du dækker med låg eller husholdnings film. Af denne portion bliver der mere end der kan være i min is form, så resten hældte jeg i en mindre skål med låg.
Frys.
Jeg lod isen fryse til dagen efter men laver man isen som pind-is, så er de klar på ca. 4 timer. Laver du isen i en større skål må du væbne dig med tålmodighed til dagen efter – eller måske kan du have den klar, hvis du laver den om morgenen og skålen ikke er alt for stor.
Dagen efter tog jeg isene ud af formene, smeltede mørk chokolade (puttede den smeltede chokolade i en frysepose og klippede et hul) og pyntede endvidere med grov færdigkøbt chokolade drys og kokosmel (det skal gå stærk for chokoladen stivner nærmest når den rammer isen, så tag 1 is af gangen). Bagefter pakkede jeg hver is ind i små plastik poser.
Jeg brugte de samme poser som sidst jeg lavede is – eller.. ikke de samme vel, men nogen magen til…
Jeg siger jer – den her banan is smager så englene synger. No kidding.
Og det bedste ved hele opskriften er, at man ikke skal ud og røre i den mens den fryser. Du smider den bare i fryseren og venter til den er klar.

Sikke en lækker opskrift:-) mener du ikke at chokoladen stivner når den rammer den kolde is, i stedet for at den smelter? Eller er det isen der smelter?
